Beet Juice Lowers Blood Pressure, and the Plot Twist Lives on Your Tongue

Beets are the vegetable equivalent of a guy who shows up to a black tie party in a tracksuit. Loud, a little stained, weirdly confident. As it turns out, the confidence is earned.

Researchers at the University of Exeter ran a study, published in July 2025 in the journal Free Radical Biology and Medicine, on what nitrate-rich beetroot juice actually does to blood pressure. The short version: in older adults, it lowered it. The longer version involves the bacteria living on your tongue, which is not a sentence I expected to write today.

Here is the setup. They recruited 39 adults under 30 and 36 adults in their 60s and 70s. Everybody drank a concentrated beet juice shot twice a day for two weeks. Then everybody drank a placebo version with the nitrate stripped out, with a two week washout in between so nobody got confused. Classic crossover design. Everyone is their own control, which is efficient and quietly poetic.

The older group started with higher blood pressure, and after the real beet juice it dropped. After the fake stuff, it did not move. The younger group? Their pressure barely budged either way. Same juice, different result, which tells you the juice is not the whole story.

The plot twist lives in your mouth

Dietary nitrate does not become useful on its own. It needs a translator. The translator is a crew of bacteria parked on the back of your tongue, with names like Neisseria and Rothia, whose entire job is turning nitrate into nitrite. Your body then converts nitrite into nitric oxide, the molecule that tells your blood vessels to relax and open up. Relaxed vessels, lower pressure. Scientists call this the nitrate to nitrite to nitric oxide pathway, which sounds like a hiking trail and basically is one.

The Exeter team sequenced the mouth bacteria before and after. In the older adults, the beet juice knocked down a bug called Prevotella and boosted the helpful Neisseria. So the juice did not just deliver nitrate. It renovated the tenants doing the conversion. The younger people already had a decent setup, so they had less to gain.

If that sounds far-fetched, older research points the same way. When people rinse with antibacterial mouthwash, they wipe out those nitrate-reducing bacteria, oral nitrite production falls by roughly 90 percent, and blood pressure creeps up a few points. Kill the translators and the message does not get through. It is a strange argument for going easy on the mouthwash, but here we are.

How big a deal, honestly

Let us not get carried away. A meta-analysis of inorganic nitrate and beet juice trials found an average drop of about 4.4 mmHg in systolic blood pressure (the top number). That is real and useful at the population level, the kind of nudge that adds up for heart health over years, but it is not a medication and does not pretend to be. Some studies of long-term isolated nitrate found a smaller effect or none at all, so the science is not unanimous. The Exeter trial was also small, ran for two weeks, and the clear win showed up in older folks specifically. Good science, early chapter.

The honest takeaway is the boring one your grandmother already gave you: eat your vegetables. Beets are loaded with nitrate, but so are spinach, rocket, celery, fennel, and kale. The lead researcher said exactly that. If you cannot stand beets, the leafy greens are standing right there waving at you.

If chugging ruby juice twice a day is not your idea of fun, the concentrated route exists. A beet root supplement carries the nitrate without the purple mustache. Some people lean on nitric oxide support like L-arginine, which chases the same vessel-relaxing goal down a different street. For the wider cardiovascular picture, CoQ10 and magnesium both turn up constantly in heart and blood pressure research. None of these are magic. They are tools, and tools work better when you actually use them.
