The label on a purple sweet potato supplement promises glycemic response support. The studies it is thinking of fed people actual sweet potatoes. Roasted ones. With dinner. Not a capsule of dried pigment between meals while scrolling through email.
This is a common move in the supplement industry. Take research on a whole food, extract one photogenic compound, put it in a bottle, then borrow the data as if eating the food and swallowing the extract are the same metabolic event. They are not. One is dinner. The other is a powder that used to be dinner before someone ran it through a laboratory and charged you forty dollars for thirty capsules of it.
What The Research Actually Fed People
A 2025 review in Food Science & Nutrition discusses anthocyanins from Ipomoea batatas, the purple sweet potato. The paper cites studies where participants consumed sweet potatoes as part of meals. Whole roots. Baked or steamed. Eaten with other foods. The reviews note that anthocyanins in sweet potatoes may help regulate glucose metabolism and reduce oxidative stress in diabetic animal models, and that clinical evidence supports sweet potato consumption for glucose control in humans.
Note the word: consumption. Of the potato.
A 2014 study on the Okinawan diet recorded people eating purple sweet potatoes as a staple carbohydrate, replacing white rice. Daily consumption. For decades. As an anchoring food in a broader dietary pattern that also included vegetables, soy, fish, and moderate amounts of everything else. The sweet potato was not a supplement. It was lunch.
The supplement industry read all of this and concluded: buy our anthocyanin powder extract.
What You Are Actually Buying
An Ipomoea batatas supplement is not a purple sweet potato. It is a pigment extracted from one, then dried, milled, and capsulised. The extraction process isolates anthocyanins, the plant compounds responsible for the purple color. You lose the fiber. You lose the resistant starch. You lose the other polyphenols, the carotenoids, the vitamin C, the potassium, the context in which the body encountered this pigment for the last several thousand years of human evolution.
A 2024 review in Antioxidants notes that purple sweet potato flesh is high in anthocyanins, phenolic compounds, and carotenoids such as beta-carotene and lutein. The whole food is the delivery system. The supplement is one ingredient from that system, removed, isolated, and sold back to you at a markup.

A 2023 paper in the Journal of Agricultural and Food Chemistry points out that acylated anthocyanins, the type predominant in purple sweet potatoes, have different properties than non-acylated anthocyanins. Acylation improves stability but reduces bioavailability. Less of it gets absorbed. This is fine if you are eating a potato, because you are also getting fiber, other nutrients, and the experience of chewing food. It is less fine if you have paid for a concentrated extract of the compound that does not absorb well.
The Glycemic Bait And Switch
Marketing for purple sweet potato supplements often references blood sugar support or sweet potato glycemic response studies. Here is what those studies measured: people eating purple sweet potatoes as part of a carbohydrate-containing meal. The fiber in the whole potato slows gastric emptying. The resistant starch resists digestion, meaning it does not spike blood glucose as quickly as refined carbohydrates. The other polyphenols and nutrients in the potato contribute to the overall metabolic response.
The supplement contains none of that. It contains anthocyanins.
Extracted anthocyanins do show antioxidant activity in controlled studies, and a 2017 review in Nutrients notes that dietary anthocyanins may improve insulin sensitivity through mechanisms including reduced inflammation and modulation of glucose transporters. But dietary anthocyanins means anthocyanins consumed as part of food. The review discusses berries, red cabbage, and yes, purple sweet potatoes, eaten in the context of meals.
One study gives mice an anthocyanin extract and measures liver enzymes. Another study gives humans a serving of roasted purple sweet potato with rice and measures post-meal glucose. The label lists both studies in the same footnote as if they describe the same intervention. They do not. One is pharmacology. The other is dinner.
What Is Actually Supported Here
Eating purple sweet potatoes may help with glucose regulation. That sentence has decent evidence. The 2025 review notes that sweet potato consumption in clinical trials was associated with improved glucose control and reduced insulin resistance in adults, although it also notes that challenges remain regarding the need for larger and longer human studies. A 2021 review in Molecules highlights sweetpotato as a functional food in sub-Saharan Africa, noting its rich content of bioactive compounds, though again the focus is on consuming the actual root vegetable.
Taking a capsule of anthocyanin extract might do something. That sentence has much thinner evidence, most of it in animals, and none of it directly comparable to the whole-food studies that the best purple sweet potato supplement labels are quietly borrowing from.
The 2025 review is explicit about this problem: challenges include the poor bioavailability of anthocyanins and the need for stronger human studies. Translation: the compound does not absorb well, we do not have enough data in actual people, and the data we do have is mostly on people who ate the food, not the extract.
The Label's Favorite Words
Supports. Like a folding chair. Nobody says what it is holding up.
Healthy function. Function of what?
Promotes. Promotes how?
May help. May. The label is three verbs and zero commitments.
The 2022 review in Foods notes that sweet potato is rich in slow-digestible and resistant starch, vitamins, minerals, carotenoids, and polyphenols, and that these components help prevent illnesses including cardiovascular disorders. Notice what is not in that sentence: the word extract. The benefits are attributed to the whole food, in a diet, over time.
You can buy an anthocyanin supplement for blood sugar support, or you can buy a purple sweet potato for about two dollars, roast it, eat it with a meal, and get the anthocyanins plus everything else the studies actually measured. One of these is supported by decades of epidemiology. The other is supported by the fact that anthocyanins are purple and purple photographs well on a label.
