Gan Jiang: Dried Ginger That Took the Long Road on Purpose

Gan Jiang is dried ginger root powder, unsulfured, and it did not get there by accident. Fresh ginger is called Sheng Jiang. Dry it out slow, the traditional way, and it becomes Gan Jiang. Same plant, different personality.
