Shui Zhi is the unsulfured form of gardenia fruit, and unsulfured just means honest.
A lot of dried herbs get treated with sulfur so they look brighter on the shelf and last longer in the bag. Which is a nice trick if you're selling produce, less nice if you're selling something people are going to steep and drink. Shui Zhi skips that step entirely.
